¿Alguna vez has visto un japchae-bap así? Partido en el primer bocado. Unos fideos elásticos que no he encontrado en ningún otro lugar de Seúl — gruesos como fideos chewy, pero con una textura aún más densa e insistente. Sabe a base de salsa de soja, pero con un toque de picante que se cuela al final. Esto no es solo un plato — es una tentación. Teníamos un sistema familiar establecido: mi mujer siempre pide el jjambbong de ternera picante, yo los fideos con salsa de frijoles negros, y el niño el cerdo agridulce. Pero un bol de este japchae-bap rompió todo ese orden. Ahora no soy yo quien elige el menú — es este japchae-bap el que me llama.
