In Imam-dong, Nam-gu, Gwangju Kimchi Town is the culture center and hands-on venue built by a city famous for its kimchi festival. A longtime instructor says, “Gwangju kimchi doesn't jump out with fish sauce — the flavor soaks in deep.” The exhibit hall shows the region's kimchi types and history, and in the workshop you toss Namdo seasoning into salted cabbage and make a head to take home. He suggests, “Don't skimp on the seasoning, but press it in between the leaves by hand.” In the autumn kimjang season, festivals and classes crowd in, so reservations are essential.
