In Seo-gu's Sangmu district, packed with offices and government buildings, the galbi alley only fires up its grills at dinner. A longtime griller says, “Daytime Sangmu and nighttime Sangmu are different neighborhoods.” The marinade is kept from being too sweet, seared fast over charcoal, and the scissoring is left to the guest. Lettuce, garlic, and doenjang come standard, with naengmyeon or doenjang stew to finish. Because it's a district of company dinners, he laughs that the rule here is “meat fast, conversation slow.” Once the first guests settle in, the smell of charcoal spreads down the whole alley.
