This is a Yangdong Market noodle stall that grew into a narrow shop. The keeper remembers when dawn produce vendors were the first customers; by 5:30 a.m. she has lifted anchovies and kelp from a clear broth. As she says, “Noodles should not hold you long — they should send you back into the market,” she boils only eight portions at a time and never lets noodles swell in advance, even when busy. The sauce for spicy mixed wheat noodles rests a day with grated apple and chili flakes. She also says, “If kimchi is late, the noodles lose,” so young-radish kimchi comes straight from a small jar. On one market day, an elderly shopper paid with hand-picked mugwort instead of coins, and a short-lived spring mugwort pancake joined the menu.
