The specialty of Yangdong Market, a Gwangju institution since the 1910s. A whole bird fried to order, crisp and hot. The original market fried chicken that even out-of-towners rave about.

“Franchises sell pieces. We sell a whole bird.”

A fried-chicken stall that has held one spot in Yangdong Market for nearly forty years. Only when an order comes does a whole bird go into the oil. The owner says, “Fry it ahead and it goes soggy. The wait is part of the flavor.” Being inside the market, seating is tight, so many take it to go. It comes with salt and the market's own pickled radish. Younger customers ask for sauce, but the house keeps the thin-batter old style. Walking the market once and buying a whole chicken on the way out — that, they say, is the Gwangju way.
