This is a second-generation owner who inherited his mother's cauldron in Yangdong Market. At 9 a.m. he starts the first pot, replenishing a broth of soy, ginger, scallion, and bay leaf twice a day. As he says, “Market jokbal has to taste good even after it cools,” moisture matters more than heat because so many customers take it away. Each trotter rests 20 minutes after braising, then is sliced thin along the bone; the cold salad is tossed with mustard sauce and cucumber only after ordering. He adds, “When the knife glides, today's braise was right.” One holiday eve, a customer bought enough for three households and asked for name tags; even now, large orders are bundled family by family with pink rubber bands.
