A duck-soup house that began on Yudong's duck street and expanded to Sangmu. The duck simmers long with water dropwort and ground perilla until the broth turns thick. The owner explains, “Gwangju oritang isn't a clear soup — it's a soup held together by perilla.” The dropwort goes in last to keep its scent; as the broth reduces, you finish by stirring in rice or porridge. Known as a restorative, it draws out-of-towners on purpose. For foreign guests, she notes that the dropwort and perilla soften the duck's gaminess. Simmering porridge in the leftover broth is this house's closing move.
