This is a husband-and-wife gukbap house in front of Songjeong Station. He washes pork bones and shoulder at 4 a.m.; she opens the chive salad and kkakdugi jars at 6. As they say, “Station gukbap can be fast, but it still has to show care,” bowls arrive within five minutes, yet the broth has been held over low heat since the night before. Foam is skimmed three times at the first boil for clarity, and suyuk is boiled for 40 minutes, then covered with a damp cloth. They laugh that “when guests ask about train time, we check the clock before the soup.” One traveler missed the last train, ate a slow plate of suyuk, left on the first train next morning, and now takes the same window seat whenever he returns to Gwangju.
